Notes

NOTES

  • If you don’t want to grill, you can cook the steak on the stove. Heat 1/2 tbsp oil in a large skillet on medium heat. Add the steak when the pan is hot. Cook on each side for about 4 minutes, until internal temperature reaches 140. When the steak is finished, remove from the pan and set on a plate.

LAZY VERISION

  • Go for ground beef instead of steak! Cook the ground beef in a skillet and add the marinade in.

SUBSTITUTIONS

  • Sub for coconut aminos: low sodium soy sauce

  • Sub for fish sauce: 1/2 tsp salt

  • Want more carbs? Add some cooked and cooled vermicelli rice noodles!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the veggies separate from the steak.

  • Store the dressing and peanuts separately. I like using these containers.

REHEATING

  • Remove the veggies from your meal prep container and add to a bowl. Reheat the steak for 30 seconds, stirring halfway through. Then add the steak, dressing and peanuts onto the veggies.

REDUCE FOOD WASTE

  • Leftover mint? Wrap the mint leaves in a damp paper towel and put in an open Ziploc bag (don’t seal it!) Keep in the fridge for a few weeks.
