Grinder Pasta Salad

Here's another delicious, no reheat lunch for those days when you don't even have a minute to spare at the microwave (I know teachers feel me on this one). This one is ridiculously easy to prep too. The only thing you have to cook is the pasta!  My husband said he could eat it every day. It's my healthier take on the viral grinder sub- you get all the taste without all the calories.

Notes

LAZY VERISION

  • Use a veggie chopper to chop everything.

  • Use pre cut lettuce.

KID FRIENDLY VERSION

  • Before you combine everything together, take some components out to serve separately to your kid.

SUBSTITUTIONS

  • Sub for tomatoes: bell peppers

  • Sub for onion: omit

  • Sub for parmesan cheese crisps: grated parmesan

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • Store the dressing separately- I like using these containers.

REHEATING

  • No reheating needed for this lunch!

REDUCE FOOD WASTE

  • Leftover romaine lettuce? Use it in a salad or as a taco topping this week or next! Store wrapped in a paper towel in a ziploc bag to keep it fresh.

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
