Cheesy Broccoli Chicken Bake

I love cozy, comforting recipes but I don’t want to overindulge during my regular week day meals. The recipe for this week is perfect- it tastes like broccoli cheddar soup but without all the fat and calories. It’s a meal you can feel good about eating all week long. Notes

LAZY VERISION

  • It’s cute to make this in individual meal prep containers, but making it in one casserole dish would be easier- but will take longer to cook! I would cook bake it for 20 minutes initially, then bake it and stir every 10 minutes until the chicken and rice is cooked.

SUBSTITUTIONS

  • Sub for broccoli: cauliflower, green beans

  • Sub for almond milk: regular milk, coconut milk, oat milk

  • Sub for broth: water

  • Can omit the mustard powder

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

REHEATING

  • Add a tablespoon of water over the top. Reheat for 1-2 minutes.
