LAZY VERSION
Use pre chopped veggies
Use a red enchilada sauce and omit the spices, crushed tomatoes, and beef broth. Add in the enchilada sauce in step 6.
SUBSTITUTIONS
Sub for bell peppers and cauliflower rice: any veggie would work! This is a great recipe to clean out any leftover veggies in your fridge. Just chop them small.
Sub for ground beef: ground turkey
Sub for black beans: pinto beans, or omit
Dairy free: use a dairy free shredded cheese or omit
STORAGE
Allow to come to room temp and then store in airtight containers in the fridge. I like using these containers.
You can freeze this enchilada bake! You can freeze it right in the glass container.
REHEATING
Reheat for 2-3 minutes.
REDUCE FOOD WASTE
If you have leftover tortillas, you can freeze them! Place parchment or wax paper between each tortilla, then freeze in a Ziploc bag.
