Lazy Enchilada Bake

This Lazy Enchilada Bake is so damn good and doesn’t taste healthy at all. Your whole family is going to love it. It’s cheesy and full of flavor. BUT it’s still high protein, high fiber, veggie packed, and macro friendly to help you achieve all of your goals. And the best part- it’s basically foolproof and ridiculously easy to make. I love enchiladas, but I hate rolling and assembling them. So we just skip that whole part and it’s still just as delicious. I just know it’s going to become your new favorite meal.

Notes

LAZY VERSION

  • Use pre chopped veggies

  • Use a red enchilada sauce and omit the spices, crushed tomatoes, and beef broth. Add in the enchilada sauce in step 6.

SUBSTITUTIONS

  • Sub for bell peppers and cauliflower rice: any veggie would work! This is a great recipe to clean out any leftover veggies in your fridge. Just chop them small.

  • Sub for ground beef: ground turkey

  • Sub for black beans: pinto beans, or omit

  • Dairy free: use a dairy free shredded cheese or omit

STORAGE

  • Allow to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • You can freeze this enchilada bake! You can freeze it right in the glass container.

REHEATING

  • Reheat for 2-3 minutes.

REDUCE FOOD WASTE

  • If you have leftover tortillas, you can freeze them! Place parchment or wax paper between each tortilla, then freeze in a Ziploc bag.
