Crockpot Chicken Enchilada Soup

I love cozy, comforting recipes but I don’t want to overindulge during my regular week day meals. Notes

LAZY VERISION

  • Use a jar of red enchilada sauce (10-15oz) and omit the tomato sauce, garlic, and spices.

SUBSTITUTIONS

  • Sub for chicken thighs: chicken breasts

STORAGE

  • Allow the soup to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • This soup is freezer friendly! I like storing it in Souper Cubes.

  • If using avocado or sour cream as toppings, store them separately.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through. Then, add on toppings.
