Notes

SUBSTITUTIONS

  • Sub for celery: green bell pepper

  • Sub for carrots: red bell pepper, zucchini

  • Sub for chicken broth: veggie broth, water

  • Sub for chicken thighs: chicken breasts

  • Sub for cauliflower rice: can omit

LAZY VERSION

  • Use pre chopped carrots, celery, and onion

  • You can skip putting the chicken in the oven and just cook it completely on the skillet. You may have a little more burned bits in the pan, but it will still taste good!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

  • Store the sauce separately- I like using these containers.

REHEATING

  • Add a teaspoon of water to the rice. Reheat for 1-2 minutes, stirring halfway through. Remove the container with the sauce first!

REDUCE FOOD WASTE

  • Leftover carrots? If you’re doing the meal plan for the week, add them to the Steak & Potatoes Skillet ! Or cut them up and serve them as a snack with hummus or ranch.

  • Leftover celery? If you’re doing the meal plan for the week, add them to the Steak & Potatoes Skillet ! Or serve them as a snack with ranch or peanut butter.

  • Leftover greek yogurt? Add to a smoothie for a protein boost! Or use as a sour cream replacement- put on a dollop on the Creamy Taco Soup.
