Green Chile Chicken Bake

I’m kind of obsessed with this recipe. I love anything green chile, but especially when it’s creamy and cheesy too. This recipe is kind of like my Cheesy Broccoli Chicken Bake, but even better IMO. This Green Chile Chicken Bake is so easy and delicious. It’s flavorful and cozy but of course high protein and macro friendly. And you’ll love how it all bakes in one dish!

Notes

LAZY VERSION

  • It’s cute to make this in individual meal prep containers, but making it in one casserole dish would be easier- but will take longer to cook! I would cook bake it for 20 minutes initially, then bake it and stir every 10 minutes until the chicken and rice is cooked.

SUBSTITUTIONS

  • Sub for almond milk: regular milk, coconut milk, oat milk

  • Sub for broth: water

  • You can use any chopped veggies you like in this recipe! Zucchini would be great

STORAGE

  • Allow to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • This recipe is freezer friendly! Just freeze it right in the container.

REHEATING

  • Add 1 tsp of water on top. Reheat for 1-2 minutes, stirring halfway through.
