Preheat the oven to 400 degrees. Line a baking sheet with a longer piece of foil than needed to cover the baking sheet. Create a divider down the middle by tenting and creasing the foil.

Notes

LAZY VERISION

  • Use chopped rotisserie chicken so you can skip cooking the chicken! Just use 1/2 tsp paprika, 1/2 tsp chili powder, 1/4 tsp garlic powder and 1/4 tsp salt for the sweet potatoes.

  • Use Yai’s Thai Almond Sauce instead of making your own dressing

SUBSTITUTIONS

  • Sub for almond butter: cashew butter, tahini, peanut butter (not Whole30)

  • Sub for sweet potatoes: butternut squash

  • You can use any kind of greens you like! I like using kale because it holds up so well. Any other green, I would store separately.

  • You can use any kind of raw veggies you like! Cucumber, bell pepper, red onion, radishes, shredded carrots are all good ideas

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the veggies separate from the chicken and sweet potatoes.

  • Store the dressing separately- I like using these containers.

REHEATING

  • Remove the sweet potato and chicken from your meal prep container and add to a bowl. Reheat for 1-2 minutes, stirring halfway through. Then add on the veggies and dressing.

REDUCE FOOD WASTE

  • Leftover kale? It will stay good in the fridge for about a week. After that, you can freeze it! I just stick the whole bag in the freezer. I will add a handful of kale to soups, stews, and curries.
