Spicy Sausage Sheet Pan

I love this recipe because it’s one of those ones that you really can’t mess up. It’s super easy, just slice everything up and throw on a sheet pan. I call it a “spicy” sausage sheet pan, but of course you can make it as mild as you want. You can also have it as breakfast! Add a fried egg on top and you’ll be in heaven.

Notes

LAZY VERISION

  • Get the tiniest potatoes you can find so you don’t have to slice them. Cook them for a few minutes longer before adding the other ingredients.

  • If using broccoli, get precut broccoli.

SUBSTITUTIONS

  • Sub for potatoes: you can do turnips or carrots if you want to have less carbs

  • Sub for broccolini/broccoli: cauliflower, asparagus

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover broccoli? Dip in ranch for a snack or sauté it with ghee and garlic for an easy side.

  • If you do 1.5 packages of sausage, freeze the other half. I just put in a ziploc bag, press all the air out, and stick in the freezer.
