Italian Grinder Sub in a Tub

Notes

LAZY VERISION

  • Use a chopper to chop all the veggies, meat and cheese.

SUBSTITUTIONS

  • Dairy free: omit the provolone and cheese crisps. Substitute the greek yogurt for mayonnaise.

  • Want more carbs? Serve this salad on a wrap!

  • Sub for tomatoes: red bell pepper

  • Sub for iceberg lettuce: romaine lettuce

  • Sub for red onion: any onion or omit

  • Sub for banana peppers: black olives

STORAGE

  • Allow everything to come to room temp and then store in airtight containers in the fridge. I like using these containers to keep the meat and cheese separate from the veggies.

  • Store the dressing separately- I like using these containers.

REHEATING

  • No reheating needed for this lunch!

REDUCE FOOD WASTE

  • Leftover onion? Save it! Store it in a ziploc bag and use it in a recipe next week.

  • Leftover lettuce and tomatoes? If you’re following this week’s meal plan, add them as a topping onto the Philly Cheesesteak Bowls. If not, use them in a salad or as a topping for tacos!
