Crockpot Tuscan Chicken Soup

This Crockpot Tuscan Chicken Soup is the perfect recipe for your crockpot’s fall debut- it’s delicious, cozy and comforting. It has quickly become one of my favorite soups! It tastes decadent, but of course we keep it light and macro friendly so you can enjoy it and feel good, too.

Notes

SUBSTITUTIONS

  • Sub for cannellini beans: navy beans, great Northern beans, more potatoes, or omit

  • Sub for kale: spinach

  • Whole30: omit the beans and parmesan and use a Whole30 cream cheese. Add nutritional yeast instead of parmesan.

  • Dairy free: use a Whole30 cream cheese. Add nutritional yeast instead of parmesan.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers in the fridge. I like using these containers.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover kale? It will stay good in the fridge for about a week. After that, you can freeze it! I just stick the whole bag in the freezer. I will add a handful of kale to soups, stews, and curries.
