NOTES
The gochujang paste is a Korean ingredient that can be found in the Asian food section of most grocery stores. It’s also at Trader Joe’s! You can click on the link to buy them on Amazon or just to see what they look like so you can find them in store. OR check below for substitutions.
LAZY VERSION
Use a microwave rice packet instead of making your own rice.
SUBSTITUTIONS
Sub for gochujang paste: sriracha
Sub for coconut aminos: low sodium soy sauce
Sub for honey: maple syrup
Sub for cucumbers: shredded lettuce (just don’t add dressing until day of), shredded carrots. Don’t like raw veggies? Just serve with some steamed broccoli or veggie of choice!
Sub for green onion: 1/4 cup chopped of any kind of onion
STORAGE
Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the cucumber salad separate from the beef and rice.
REHEATING
Remove the beef and rice from your meal prep container and add to a bowl. Reheat for 1-2 minutes, stirring halfway through. Then add on the cucumber salad.
REDUCE FOOD WASTE
Leftover gochujang paste? Save it! It will last in the fridge for a long time. You can use it to make many other recipes, like my Korean Beef Noodles or Crockpot Korean Chicken.
