Notes

NOTES

  • You can cook this on the grill if you want! Keep the chicken breasts whole. Use half the sauce to marinate the chicken, the other half pour over the veggies on a grill pan or foil packet.

LAZY VERSION

  • I love using fresh pineapple in this recipe, but you can use precut chunks or even canned pineapple chunks!

  • Use a bag of broccoli florets instead of chopping a head of broccoli.

  • Use a microwavable rice packet instead of making your own.

SUBSTITUTIONS

  • Sub for green onion: 1/4 of any kind of onion, or omit

  • Sub for bell pepper/broccoli: any veggies you like! Carrots, green beans, carrots, cauliflower would all work

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover BBQ sauce? Make my BBQ Chicken Bowls!

  • Leftover coconut milk? Freeze it! I like to freeze it in an ice cube tray so I can just add some to future recipes or smoothies.
