NOTES

  • Easily make this Whole30 friendly with compliant ranch and buffalo sauce. My favorite ranch is here, buffalo sauce here!

SUBSTITUTIONS

  • Use any veggies you like for dipping!

  • No almond flour? Bread crumbs should work perfectly!

  • No green onion? Try a minced garlic clove instead.

  • You can switch out the potatoes for sweet potatoes if you like.



STORAGE

  • Allow everything to come to room temp before adding to airtight containers. For this meal, I like to use a 2 compartment meal prep container like these. Put your ranch dressing in a lil container like this.



REHEATING

  • Separate the veggies and ranch (I like to just place them on the lid of my meal prep container). Then microwave the meatballs and potatoes for 1-2 minutes, stirring halfway through.



REDUCE FOOD WASTE

  • Leftover green onion? I like to use some of the green part for garnish when I’m feeling fancy. You can save any leftover in a ziplock bag and it will be good till next week! Add to a stir fry or whatever else you want.

  • Leftover veggies? Keep them for snacks with hummus or add them to salads!
