Butternut Squash Mac & Cheese

This is my remake of the Trader Joe’s butternut squash Mac & cheese, but we make it high protein, gluten free, way lighter, and a complete meal! Your whole family is going to love this one. Trust me, your kids will not be able to taste the butternut squash in the sauce at all. It’s so creamy and decadent tasting, but actually lower in fat and high protein so you can feel good eating it all week.

NOTES

  • The butternut squash I used was cut into pretty small cubes. If yours is in bigger cubes, you may need to cook it a little longer!

LAZY VERSION

  • Use bagged pre-cubed butternut squash

SUBSTITUTIONS

  • Sub for green beans: you can use any veggie you want! Broccoli would work well.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

REHEATING

  • Add 1-2 tsp water to the Mac and cheese. Reheat for 1-2 minutes, stirring halfway through.
