LAZY VERISION
You can make the pork in the instant pot to take less time. Just put everything in for 30 minutes!
Instead of making the rice, you can use 1-2 microwave packets. Ben’s Original and other brands have a cilantro lime flavor!
Instead of chopping the onions and bell peppers, you can buy a pre cut frozen bag.
SUBSTITUTIONS
Add any toppings you like to customize this bowl! You can add cheese, avocado, lettuce, salsa, hot sauce, sour cream, etc.
Make this recipe Whole30 by using cauliflower rice instead of regular rice. Just sauté a frozen bag of cauliflower rice, then add the lime juice, olive oil, garlic powder, and salt.
STORAGE
Allow everything to come to room temp and then store in airtight containers.
REHEATING
Reheat for 1-2 minutes, stirring halfway through.
REDUCE FOOD WASTE
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!
