Fiesta Chicken Pasta Salad

Notes

NOTES

  • You can grill the chicken if you prefer. Season it, then grill it, then cube it after.

LAZY VERISION

  • Use rotisserie chicken instead of making your own chicken.

  • Use pre chopped veggies and lettuce.

KID FRIENDLY VERSION

  • Before you combine everything together, take some components out to serve separately to you kid.

SUBSTITUTIONS

  • You can add in other veggies and toppings! Avocado, sliced tomatoes, black olives, and cilantro would all be great additions.

  • Sub for corn: more black beans or omit

  • Sub for black beans: pinto beans, more corn or omit

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • Store the dressing separately- I like using these containers.

REHEATING

  • No reheating needed for this lunch!

REDUCE FOOD WASTE

  • Leftover romaine lettuce? Use it in a salad or as a taco topping this week or next! Store wrapped in a paper towel in a ziploc bag to keep it fresh.

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover beans and corn? Freeze them! Just add to a ziploc freezer bag, press the air out, and freeze. Add them to a future soup, chili, or when you make this dish again. Or if you have kids, my girls love eating beans and corn mixed together! Try it!
