Easy Shrimp Scampi

Shrimp Scampi feels like such a fancy meal, but it's actually ridiculously easy. And I make it even easier by letting the oven do the work and baking it all in a dish. It's so light and flavorful- perfect for a weeknight dinner or entertaining!

Notes

NOTES

  • You can prep the butter sauce and trim the green beans ahead of time.

KID FRIENDLY VERSION

  • My oldest will eat this recipe as written, but here's some ways to tailor it to more picky kids:

  • Make some extra noodles to serve to them as plain butter noodles

  • Some kids like the garlic butter sauce on the shrimp, some don't. You can make a few plain shrimp by just boiling in water for 2-3 minutes.

SUBSTITUTIONS

  • Sub for shrimp: chicken breast (just cook for a few minutes longer)

  • Sub for green beans: asparagus, broccoli, zucchini

  • Dairy free: use a butter flavored coconut oil or olive oil, sub the parmesan cheese for nutritional yeast

STORAGE

  • Allow everything to come to room temp and then store in airtight containers in the fridge. I like using these containers.

REHEATING

  • Add 1 tsp of water to the pasta. Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover parsley? Store it like a bouquet of flowers in a mason jar in your fridge.
