SUBSTITUTIONS
You can make this dairy free by using a dairy free cheese or omitting the cheese altogether.
You can use two cans of green enchilada sauce instead of the green salsa. You will omit the arrowroot powder also, if you do this.
STORAGE
Allow everything to come to room temp and then store in airtight containers.
REHEATING
Reheat for 1-2 minutes, testing halfway through.
REDUCE FOOD WASTE
Leftover tortillas? They will be good for about a week, so you could make some breakfast tacos over the weekend. You can also freeze them.
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
