Loaded Taco Fries

I love tacos. I love fries. So let’s put them together! This recipe is kinda like healthy nachos on top of homemade French fries. I mean, what could be better?! Well what’s better is the fact that you can make it in 30 min and it’s high protein, low in calories and fat. You can even make it Whole30. This recipe makes a great meal prep or a dinner! I love that you can customize the toppings to make it family friendly for everyone to enjoy. This is sure to be a new favorite!

Notes

LAZY VERSION

  • Use frozen French fries instead of making your own.

  • Use taco seasoning for the ground beef.

  • Use pre chopped bell peppers.

SUBSTITUTIONS

  • Dairy free: use a dairy free shredded cheese or omit.

  • Whole30: omit the cheese and greek yogurt. Top with avocado and hot sauce.

  • Sub for peppers: you can add any chopped veggies with the ground beef!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • I like using these containers to keep the lettuce separate from the beef and fries.

  • You can store the fries and beef mixture separately, or you can just add the beef on top of the fries in your meal prep container.

  • Store the yogurt sauce separately- I like using these containers.

REHEATING

  • Remove the container with the yogurt sauce. Remove the fries and beef from your meal prep container and add to a plate. Reheat for 1-2 minutes, stirring halfway through. Then add on the toppings.

  • If you store the fries separate from the beef, you can reheat the fries in the air fryer to get the crispier!

REDUCE FOOD WASTE

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!
