Egg Roll in a Bowl

This Egg Roll in a Bowl is such a timesaver- there’s minimal chopping and everything cooks in one pan so you have less dishes. It tastes like your favorite take out treat but we pack it with 33g of protein, tons of veggies, and make it Whole30 friendly. It’s always my go to meal prep when I don’t have much time or I’m feeling lazy. It’s so easy, takes just 25 minutes to prep, and it always hits the spot.

Notes

LAZY VERISION

  • Use pre chopped onions about (1/4 cup) instead of the green onions.

SUBSTITUTIONS

  • Want more carbs? Serve with rice if not doing a Whole30!

  • Sub for green onions: 1/4 any onion

  • Sub for cabbage: broccoli slaw, shaved Brussels sprouts

  • The spicy mayo is totally optional- I actually prefer it without!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • Store the spicy mayo separately- I like using these containers.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through. If topping with spicy mayo, add after reheating.
