Turn cooking mode on
Step 1
Mix together the oil lime juice, chili powder, cumin, garlic powder, and salt. Pour over the chicken and toss to coat.
1 lb Chicken breast
1/2 tbsp Oil
1 tbsp Lime juice
1 tsp Chili powder
1 tsp Cumin
1 tsp Garlic powder

Step 2
Heat the grill to medium heat (check notes for other ways to cook)
Step 3
Add the chicken and cook for 3 minutes on each side, until the internal temperature reaches 165 degrees F.
Step 4
Remove from the grill and let rest. Slice or cube the cooked chicken.
Step 5
Chop the ¼ onion and cilantro (enough for 1-2 tbsp chopped). Mix together with the can of corn, lime juice, cumin and salt.

NOTES
Not into grilling? You can also cook the chicken on the stove and oven! Heat a non stick pan on high heat. Add the chicken and sear on each side for about 3-4 minutes. Add to an oven safe pan and cook in the oven at 400 degrees. Cook until the internal temperature reaches 165 degrees F (about 15-20 minutes).
SUBSTITUTIONS
Add any toppings you like to customize this bowl!
STORAGE
Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the corn and lettuce separate from the chicken and rice.
REHEATING
Remove the corn and toppings from your meal prep container and add to a bowl. Reheat the rest for 30 seconds-1 minute, stirring halfway through. Then combine everything in a bowl.
REDUCE FOOD WASTE
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
Leftover cilantro? Store it in a mason jar filled halfway with water. Make sure the stem side is down with the leaves sticking out, like a cute lil cilantro bouquet.
