Notes

LAZY VERISION

  • Use microwave rice packets to serve with.

  • Use pre chopped onion and bell pepper.

SUBSTITUTIONS

  • Whole30: omit the honey. Serve with cauliflower rice.

  • Sub for green beans: any frozen veggie like broccoli, cauliflower, peas, etc.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

  • This recipe is freezer friendly! Put portions into freezer ziploc bags or Souper Cubes.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!

  • Leftover coconut milk? Pour it into an ice cube tray and freeze it. Add it to future curries, soups, sauces, or smoothies!
