Notes

LAZY VERISION

  • Use pre chopped onion and bell pepper.

SUBSTITUTIONS

  • You can leave out the cauliflower rice, but you can’t really tell it’s in there! It kind of disappears into the soup.

  • Want lower carb? Leave out the rice.

  • Dairy free? Use dairy free cream cheese like Kite Hill or try coconut cream.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

  • This recipe is freezer friendly! Put portions into freezer ziploc bags or Souper Cubes.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!
