Crockpot Beef Stew

This Crockpot Beef Stew is so comforting and full of flavor. I’m lazy, so I hate how most beef stew recipes make you sear the meat first. We’re not doing that- and trust me, you won’t miss it at all. I made sure of it by making the broth of this stew super flavorful and tasty, so you can skip that annoying step. So this recipe is a true “dump and go” crockpot recipe, which makes it so easy. It’s also Whole30 friendly, and like all of my recipes- high protein and veggie packed!

Notes

SUBSTITUTIONS

  • Sub potatoes: sweet potatoes, or more veggies if you want lower carb

  • Other veggies that would be great in this stew: green beans, peas, mushrooms

  • Whole30: this stew is Whole30, just use arrowroot powder instead if cornstarch if using

STORAGE

  • Allow the stew to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • This stew is freezer friendly! I like storing it in Souper Cubes.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover carrots and celery? Save for snacks! Dip them in hummus or ranch.

  • Leftover tomato paste? Freezer it! I freeze mine in ice cube trays or ziploc bags.

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
