NOTES
I used the frozen roasted corn from Trader Joe’s! It’s really good in this recipe.
LAZY VERSION
Buy pre chopped onion and bell peppers.
Use a microwave rice packet instead of quinoa. If you do this, then skip the broth as well. Just cook the rice in the microwave, add it with the cauliflower rice and corn. Cook for 3-5 minutes.
SUBSTITUTIONS
Sub for cotija cheese: shredded Mexican blend cheese
Sub for quinoa: a microwave rice packet. If you do this, then skip the broth as well. Just cook the rice in the microwave, add it with the cauliflower rice and corn. Cook for 3-5 minutes.
Sub for ground turkey: ground beef, chicken
Sub for cauliflower rice: any finely chopped veggies. This is a great recipe to clean out your fridge!
STORAGE
Allow everything to come to room temp and then store in airtight containers, like these.
Store the yogurt sauce separately. I like using these containers.
REHEATING
Remove the container with the yogurt sauce. Microwave for 1-2 minutes, stirring halfway through. Add the yogurt sauce on top.
REDUCE FOOD WASTE
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!

Love it, I would be a bit more generous with Seasonings, we also sprinkle tajin for that authentic street corn taste.
