NOTES

  • You can grill the chicken if you prefer. Marinate it, then grill it, then cube it after.

LAZY VERISION

  • Use rotisserie chicken instead of making your own chicken.

  • Use a pre-made pesto sauce instead of making your own. Use about 1/4 cup + 1 tbsp of lemon juice.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • You can wait to add the arugula until the day you eat it, if you prefer! I added it on prep day and it stayed fresh for me.

  • You can leave the tomatoes whole to keep them fresher.

REHEATING

  • You can eat this hot or cold! If you want to eat it hot, reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover basil? Make a double batch of the pesto and freeze the extra in an ice cube tray! Or check here for how to freeze fresh herbs.
