Buffalo Chicken Salad

If you ask me, Buffalo chicken is one life’s greatest gifts. I can always go for something Buffalo chicken- but a lot of times they’re not the most healthy meals. So I took my favorite flavors and made it into a high protein, macro friendly lunch. The spicy Buffalo sauce, the creamy and cool ranch, the crunchy veggies- it’s just the best combination. And the best part is it takes just 20 minutes to throw together!

Notes

LAZY VERSION

  • Use chopped rotisserie chicken so you can skip cooking the chicken!

  • Use a veggie chopper to chop all those veggies!

SUBSTITUTIONS

  • Sub for celery: can omit, or use a green bell pepper or 1 cucumber

STORAGE

  • Store in an air tight container in the fridge. I like using these containers. Store the crackers, wrap, or bread in a separate container to keep fresh.

REHEATING

  • No reheating needed for this lunch!

REDUCE FOOD WASTE

  • Leftover onion? Save it! Store it in a ziploc bag and use it in a recipe next week.

  • Leftover celery? Use them for snacks! Dip them in ranch or hummus. Put almond butter and raisins on them for ants on a log and transport yourself back to kindergarten.

  • Leftover blue cheese? Use as topping on a salad.
