NOTES
You can cook the chicken however you like! Bake it, grill it, or air fry it.
If you want more veggies, you can add cucumber, carrots, more bell pepper, etc.
LAZY VERSION
Use rotisserie chicken instead of making your own.
Use a veggie chopper to chop all those veggies!
SUBSTITUTIONS
Sub for celery: can omit, or use a green bell pepper or 1 cucumber
If you want more veggies, you can serve with bell pepper strips, cucumber slices, or lettuce wraps
STORAGE
Store in an air tight container in the fridge. I like using these containers. Store the crackers, wrap, or bread in a separate container to keep fresh until the day of.
REHEATING
No reheating needed for this lunch!
REDUCE FOOD WASTE
Leftover carrots? Save for snacks! Dip them in hummus or ranch.
Leftover green onion? Store them in a ziploc plastic bag and use them within the week, or store them in a glass of water (root side down) in the fridge. Chop the top dark green parts to use a garnish for any dish.
