SUBSTITUTIONS
Make this Whole30 by subbing the rice for cauliflower rice.
If you can’t find chipotle powder, you can use canned chipotles in adobo sauce. I would use 1-2 of the peppers.
STORAGE
Allow everything to come to room temp and then store in airtight containers. Store the chopped pineapple separately. I like using these containers.
REHEATING
Remove the container with the pineapple and reheat for 1-2 minutes, testing halfway through.
REDUCE FOOD WASTE
Leftover pineapple? Eat it! Or freeze it for smoothies.
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
