BBQ Chicken Bowls

I’m a Texas girl so I love all the tastes of BBQ, but it’s not exactly macro friendly. These BBQ Chicken Bowls satisfy the craving but only take 30 minutes to make, are high protein, low in fat, and made with clean ingredients. They’re the perfect meal to help you feel good and look good, while still enjoying the tastes of summer.

Turn cooking mode on

Step 1

Preheat the oven to 375 degrees. Line a baking sheet with a longer piece of foil than needed to cover the baking sheet. Create a divider down the middle by tenting and creasing the foil.

NOTES

  • You can also grill the chicken! Add the seasonings, then add to a hot grill and cook for 3 min per side, flipping until cooked through. Add the BBQ sauce on top after cooking.

  • You can also air fry the chicken! Add the seasonings, then air fry at 375 degrees F for 6 minutes, then flip. Cook for another 3-6 minutes, or until cooked through. Add the BBQ sauce on top after cooking.

LAZY VERSION

  • Use pre chopped sweet potatoes.

  • Use a premade coleslaw dressing (sometimes the shredded cabbage comes with one!)

SUBSTITUTIONS

  • This recipe is already dairy and gluten free!

  • Sub chicken breasts: chicken thighs

  • Sub for honey: sugar, maple syrup/ agave, or omit

  • Sub for shredded cabbage: broccoli slaw

  • Whole30: use a Whole30 friendly BBQ sauce (like Primal Kitchens) and omit the honey from the slaw

  • This makes a delicious taco! Just omit sweet potatoes. Add the chicken, slaw and pickles on a tortilla.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the slaw separate from the chicken and sweet potatoes.

  • Store the pickles separately- I like using these containers.

REHEATING

  • Remove the chicken and sweet potato from your meal prep container and add to a bowl. Reheat for 1-2 minutes, stirring halfway through. Then add on the slaw and pickles.
