NOTES
If you don’t have an air fryer, you can cook the chicken in the oven or on the grill!
LAZY VERSION
Use a microwave rice packet instead of making your own
Use pre chopped peppers and onions and precut broccoli
SUBSTITUTIONS
Whole30: omit the honey and serve with cauliflower rice instead of regular
Sub for broccoli and red bell pepper: these veggies are more like suggestions- you can use any veggies you want. Green beans, zucchini, carrots, snow peas, mushrooms would all be great.
STORAGE
Allow everything to come to room temp and then store in airtight containers, like these.
REHEATING
Reheat for 1-2 minutes, stirring halfway through.
REDUCE FOOD WASTE
Leftover cilantro? Store it like a bouquet of flowers in a mason jar in your fridge. Or check here for how to freeze fresh herbs.
Leftover coconut milk? Freeze it! I poured mine into an ice cube tray. This makes perfect little 1 tbsp sizes of coconut milk you can add to any recipe. Or use it to make a smoothie… or a piña colada…
Leftover tomato paste? Freeze it! Just add it to a ziploc bag or to an ice cube tray and freeze.
