Notes

NOTES

  • You can cook the chicken however you like! Bake it, grill it, or air fry it.

  • If you want more veggies, you can add cucumber, carrots, more bell pepper, etc.

SUBSTITUTIONS

  • Sub for celery: can omit, or use a green bell pepper or 1 cucumber

  • If you want more veggies, you can serve with bell pepper strips, cucumber slices, or lettuce wraps

LAZY VERSION

  • Use rotisserie chicken instead of making your own.

  • Use a veggie chopper to chop all those veggies!

STORAGE

  • Store in an air tight container in the fridge. I like using these containers. Store the crackers, wrap, or bread in a separate container to keep fresh until the day of.

REHEATING

  • No reheating needed for this lunch!

REDUCE FOOD WASTE

  • Leftover celery? Save for snacks! Dip them in hummus or ranch.

  • Leftover herbs? Store them in a jar in your fridge with some water, like a vase of flowers. Loosely cover the top with plastic wrap or a plastic bag.
