Notes

NOTES

  • You can also make this in the instant pot! Add the chicken, buffalo sauce, garlic powder, onion powder, paprika, chili powder, and dill and cook on high pressure for 32 minutes.

  • I used 1.25lb chicken and 1 tbsp per serving of Bolthouse Farms greek yogurt ranch

SUBSTITUTIONS

  • Dairy free: use a dairy free ranch dressing and don’t use bleu cheese

  • Whole30: use a Whole30 ranch and Whole30 toppings

  • Sub for sweet potatoes: russet potatoes

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the toppings separate from the chicken and sweet potato.

  • Store the ranch dressing separately- I like using these containers.

REHEATING

  • Remove the sweet potato and chicken from your meal prep container and add to a plate. Reheat for 1-2 minutes, stirring halfway through. Then add on the toppings and ranch.
