Orange Chicken Stir Fry

I was inspired by the absolute deliciousness of Panda Express Orange Chicken but wanted to make it lighter and healthier. This Orange Chicken Stir Fry is just the right amount of sweet with a yummy sticky sauce, fresh veggies and stir fried chicken instead of deep fried. It’s the perfect healthy meal prep meal that is light and refreshing while still tasting like your favorite takeout.

Notes

SUBSTITUTIONS

  • Sub for coconut aminos: low sodium soy sauce

  • Sub for green onions: 1/4 any onion, or omit

  • Sub for fresh stir fry veggies: you can use 16 oz frozen veggies, just cook uncovered and don’t add water.

  • Whole30: serve with cauliflower rice

LAZY VERSION

  • Use pre cooked chicken or rotisserie chicken.

  • Skip the green onions.

  • Use a microwave rice packet.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers.

REHEATING

  • Add a teaspoon of water to the rice. Reheat for 1-2 minutes, stirring halfway through.
