Notes

NOTES

  • The sweet potato glass noodles and gochujang are Korean ingredients that can be found in the Asian food section of most grocery stores. You can click on the links to buy them on Amazon or just to see what they look like so you can find them in store. OR check below for substitutions.

SUBSTITUTIONS

  • Instead of the sweet potato glass noodles you can use regular noodles. Follow the same instructions- cook them separately then add them in to the pan in step 8. You could also use spiraled sweet potatoes. Sauté them in a separate pan to cook them, then add them in step 8.

  • Instead of gochujang, you can substitute chili garlic paste.

STORAGE

  • Allow everything to come to room temp and then store in air tight containers.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover spinach? Add it to scrambled eggs for a quick breakfast on the weekend. Or freeze it for smoothies! Just put it in a ziploc bag.

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover carrots? Use them up in a salad this week or next- carrots stay fresh for awhile in the fridge.

  • Leftover mushroom? Add it to scrambled eggs for a quick breakfast on the weekend.

Wish I had a bigger pan to cook it all in. It over flowed all over the stove. I’ll need to invest in one. Haven’t eaten this yet but smells amazing!
