Notes

NOTES

  • You can also grill the steak! Leave it whole, marinate it, then grill it. Sear on each side for 3-5 minutes, until it is medium rare. Let it rest, then cube it.

LAZY VERSION

  • Use pre chopped peppers and onions

  • Use a store bought corn salsa

SUBSTITUTIONS

  • Use any kind of rice packet you like, or make your own rice

  • Use any veggies instead of the peppers and onions. Zucchini would be great!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep my corn salsa separate from the steak, rice, and veggies.

  • Store the cheese separately. I like using these containers.

REHEATING

  • Remove steak, rice, peppers and onions from your meal prep container and add to a bowl. Heat for 1-2 minutes, stirring halfway through. Then add the corn salsa to the bowl. Top with cheese.

REDUCE FOOD WASTE

  • Leftover corn? Freeze it! Just add to a ziploc freezer bag, press the air out, and freeze. Add them to a future soup, chili, or when you make this dish again.

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
