BBQ Chicken Meatloaf

I’ve never been much of a meatloaf girl, but this one is soooo good. It has all the BBQ chicken flavors you love, but in a delicious, high protein, little loaf package. It’s such a good meal prep that you’ll actually look forward to eating everyday. There’s plenty of ways you can customize this one to your liking, so don’t let the pictures scare you! I know some of you may not be into a sweet potato mash, so don’t worry. You can make regular mashed potatoes if that’s more your vibe.

Notes

LAZY VERSION

  • Use pre chopped onion

  • Instead of making your own mashed sweet potatoes, you can buy frozen mashed sweet potatoes from Trader Joe’s!

SUBSTITUTIONS

  • Dairy free: you can omit the cheese

  • Sub for sweet potatoes: use regular potatoes for regular mashed potatoes

  • Sub for green beans: any side veggie you like!

STORAGE

  • Allow to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • The meatloaf and sweet potato mash is freezer friendly! You can store the mash in an air tight container. The meatloaf you can cook and then store in a ziploc bag with the air pressed out.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
