LAZY VERSION
Use pre chopped onion
Instead of making your own mashed sweet potatoes, you can buy frozen mashed sweet potatoes from Trader Joe’s!
SUBSTITUTIONS
Dairy free: you can omit the cheese
Sub for sweet potatoes: use regular potatoes for regular mashed potatoes
Sub for green beans: any side veggie you like!
STORAGE
Allow to come to room temp and then store in airtight containers in the fridge. I like using these containers.
The meatloaf and sweet potato mash is freezer friendly! You can store the mash in an air tight container. The meatloaf you can cook and then store in a ziploc bag with the air pressed out.
REHEATING
Reheat for 1-2 minutes, stirring halfway through.
REDUCE FOOD WASTE
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
