Chicken Satay Bowls

Thai food is my favorite and these Chicken Satay Bowls are light, refreshing, and so so flavorful. It’s the perfect end of summer recipe. It’s perfect for a meal prep lunch that you’ll actually look forward to eating everyday- or a delicious, easy dinner that comes together in just 30 minutes. It tastes just like take-out, but way lighter and with healthy wholesome ingredients.

Notes

LAZY VERSION

  • Use rotisserie chicken instead of making your own chicken. If you do this, just skip steps 4-6.

  • Use a microwavable rice packet instead of making your own.

SUBSTITUTIONS

  • Want less carbs? Swap the rice for cauliflower rice, or serve as lettuce wraps!

  • Sub for chicken breast: chicken thighs

  • Want more or different veggies? Butter lettuce and shredded carrots would also be great!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep my veggies separate from the chicken and rice.

REHEATING

  • Remove chicken and rice from your meal prep container and add to a bowl. Heat for 1-2 minutes, stirring halfway through. Then add the veggies to the bowl.

REDUCE FOOD WASTE

  • Leftover coconut milk? Freeze it! I poured mine into an ice cube tray. This makes perfect little 1 tbsp sizes of coconut milk you can add to any recipe. Or use it to make a smoothie… or a piña colada…

  • Leftover red curry paste? Keep it in the fridge and it will stay good for a few months! Use it to make my Crockpot Red Curry.
