Greek Pasta Salad

This recipe combines two of my favorite salads- Greek Salad and pasta salad. I love eating pasta salad in the summer, but it’s not always the lightest summer meal. So you know we had to fix that! This one is high protein, veggie packed, and macro friendly of course. It’s also super easy to make and takes just 30 minutes.

Notes

NOTES

  • You can grill the chicken if you prefer. Marinate it, then grill it, then cube it after.

LAZY VERISION

  • Use rotisserie chicken instead of making your own chicken.

SUBSTITUTIONS

  • Dairy free: omit the feta or try a dairy free feta. If you omit the feta, I would add some more olives or some chopped banana peppers to add more flavor.

  • Sub for olives: banana peppers, or omit

  • Sub for cucumbers: bell pepper

  • Sub for tomatoes: bell pepper

  • Sub for red onion: any kind of onion, or omit

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I used these from Zwilling.

REHEATING

  • No reheating needed for this lunch! You may want to add 1 tsp of water to it before eating, especially if you use gluten free pasta as it can dry out.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
