Notes

NOTES

  • In step 9, you may need to add a little water if the rice has absorbed all of the liquid.

  • Want extra veggies? Add in a cup of frozen cauliflower rice in step 10.

LAZY VERSION

  • Use a microwave rice packet instead of rice. Cook it in the microwave, then add to the skillet in step 8. Omit the chicken broth and skip cooking for 10 minutes. Stir until everything is combined! You may need a little bit of water or chicken broth to reach the right consistency.

SUBSTITUTIONS

  • Dairy free: use a dairy free cream cheese and omit the shredded cheese on top or use a dairy free shredded cheese

  • Sub for chicken broth: vegetable broth, beef broth, or water with 1/2 tsp garlic salt

  • Sub for corn: more black beans or omit

  • Sub for black beans: pinto beans, more corn or omit

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • If topping with avocado, store it separately.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!

  • Leftover beans and corn? Freeze them! Just add to a ziploc freezer bag, press the air out, and freeze. Add them to a future soup, chili, or when you make this dish again. Or if you have kids, my girls love eating beans and corn mixed together! Try it!
