NOTES:

*If you don’t have a muffin tin, or don’t want to use one, just make this into an egg casserole! Just add your layers into a 9x13 casserole dish or 4 glass meal prep containers instead of the muffin tins.

*Makes 12 egg bites

SUBSTITUTIONS

  • Don’t like spinach? You can use any green, or even any chopped up veggie.

STORAGE

  • Allow everything to come to room temp and then store in air tight containers.

  • Freeze extra portions of the egg bites! You can put them on a plate in the freezer until mostly frozen, then add them to a ziploc freezer bag.

REHEATING

  • Reheat 1 egg bite for 30 seconds, 2 egg bites for 45, or 3 egg bites for 1 minute. Let stand for a 1 minute before eating. You can also cut them in half to let them reheat more evenly.

REDUCE FOOD WASTE

  • Leftover bacon? Save it! Put it in a ziploc bag sealed tightly and it will last for 5-7 days- just in time for a yummy weekend breakfast.
