Add the ¾ cup rice, ¼ cup coconut milk, 1 cup water and ½ tsp salt to a large pot on high heat. Bring to a boil, then cover and turn the heat down to low. Set a timer for 15 minutes.

LAZY VERISION
Use a pre made rice packet instead of making your own rice.
Use precut pineapple.
SUBSTITUTIONS
Sub for ground turkey: any ground meat will work
Sub for Sriracha mayo: regular Sriracha or omit. Or use sliced avocado to give you the same creamy feel if mayo gives you the ick
Sub for bell pepper: tomatoes
Sub for cucumber: tomatoes or more bell pepper
Sub for red onion: any onion or omit
Worried about spice? Omit the cayenne in the turkey and reduce the sriracha for the salsa to 1/2 tbsp.
Whole30: omit the rice and serve as jicama tacos instead!
STORAGE
Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the salsas separate from the turkey and rice.
Store the Sriracha mayo separately- I like using these containers.
REHEATING
Remove the turkey and rice from your meal prep container and add to a bowl. Reheat for 1-2 minutes, stirring halfway through. Then add on the salsa and Sriracha mayo.
REDUCE FOOD WASTE
Leftover coconut milk? Freeze it in ice cube trays to use in future dishes or smoothies!
Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.
Leftover cilantro? Store it like a bouquet of flowers in a mason jar in your fridge.
