Green Chile Pork Chili

I just love my crockpot. Call me lazy, but throwing in all of your ingredients and getting a full meal a few hours later is really the just the best. Chili might also be my favorite fall food. I love adding all the toppings and serving with a piece of sweet, fluffy corn bread. This Green Chile Pork Chili is a fun switch up from your regular chili but it’s maybe even more delicious. It’s not too spicy, but it’s so flavorful from the diced chiles and tomatillo. And of course we keep it light and macro friendly so you can enjoy it and feel good, too.

Notes

NOTES

  • You can make the pork in the instant pot to take less time. Just put everything in for 35 minutes!

  • I made this lower in fat and carbs to allow room for toppings and also cornbread! Seriously- it’s so good with cornbread.

LAZY VERSION

  • Skip searing the pork tenderloin. Just add the spices to the crockpot and throw everything in!

  • Use pre chopped onion and bell pepper.

SUBSTITUTIONS

  • You can add 1 cup of cauliflower rice if you want more veggies.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!
