BBQ Burger Bowls

This recipe isn’t the most beautiful, but I promise it is delicious. I love a big ol’ bowl loaded with goodness and this one delivers. It has the flavors of a juicy BBQ burger but in bowl form, so it’s meal prep friendly. It has everything you could want- lean ground beef, roasted sweet potatoes and veggies, all topped with cheese, BBQ sauce and pickled jalapenos. It’s beyond tasty but macro friendly so it’s perfect for those summer goals.

Notes

SUBSTITUTIONS

  • Sub for ground beef: ground turkey

  • Sub for cauliflower: any veggies- broccoli, green beans, carrots, bell pepper

  • You can add in any other veggies you like! Just chop them up and roast the sweet potatoes. It’s a great way to clean out your fridge.

LAZY VERSION

  • Use precut cauliflower florets

  • Use prechopped onion

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

  • If you don’t like hot pickles, store them separately.

REHEATING

  • Microwave for 1-2 minutes, stirring halfway through.
