Notes

SUBSTITUTIONS

  • Sub for chicken sausage: ground Italian sausage, shredded rotisserie chicken

  • Sub for spinach: chopped kale, any chopped veggies (zucchini or green beans would be great)

STORAGE

  • Allow the soup to come to room temp and then store in airtight containers in the fridge. I like using these containers.

  • This soup is freezer friendly! I like storing it in Souper Cubes.

REHEATING

  • Reheat for 2-3 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover spinach? You can add it to a salad, or to another recipe for the week (like the Breakfast Taco Bake!). You can also just put the bag into the freezer and add it to smoothies in the future.
