Notes

SUBSTITUTIONS

  • Sub for ground beef: ground lamb, ground turkey

  • Sub for turmeric: omit

  • Sub for cucumber/tomatoes: leafy greens, raw cabbage, and raw veg you like

  • Dairy free: use plain coconut yogurt in place of the greek yogurt. Or buy a dairy free tzatziki- Trader Joe’s has one!

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep the veggies separate from the rice and beef.

  • Store the sauce separately. I like using these containers.

REHEATING

  • Remove the chicken and sweet potatoes from your meal prep container and add to a bowl. Reheat for 1-2 minutes, stirring halfway through. Then add on the veggies and sauce.

REDUCE FOOD WASTE

  • Leftover onion? Save it! Put it in a ziploc, or better yet, buy one of these reusable onion saver things. Use the rest of the onion for another recipe later this week or next.

  • Leftover cucumbers or tomatoes? Have as snacks throughout the week! Dip in ranch or hummus.
