Thai Peanut Chicken Salad

I love peanut sauce and I love chicken salad, so this recipe is an obvious winner. It's like your favorite deli chicken salad, but instead of a mayo based sauce, it's a creamy, delicious, sweet and spicy Thai peanut sauce. I love serving this with rice cakes and cucumbers! It's definitely going to be your new favorite summer lunch.

I haven't tried! Usually with fresh veggies, freezing them can be a little weird. Maybe just freeze one portion and see how it goes!
