Thai Beef & Green Bean Stir Fry

I love ground beef recipes. They’re just so EASY. And truly hard to mess up. If you’re a beginner or just looking for a no fuss meal, then this is for you. This Thai Beef & Green Bean Stir Fry recipe is going to become your new favorite meal prep or weeknight dinner. I love Thai food and love recreating the flavors of my favorite takeout dishes but making them healthier and higher protein. The sauce on this stir fry is so flavorful, a little sweet and the fresh cilantro and peanuts just make it all come together. If you aren’t typically adventurous when it comes to food, I encourage you to try this one out! It’s not spicy at all and the flavors are relatively mild. I think you’ll really love it.

Notes

LAZY VERSION

  • Use a microwave rice packet instead of cooking rice.

  • Use chopped frozen green beans instead fresh

  • Skip the onion for less chopping

SUBSTITUTIONS

  • Sub for fish sauce: add more salt to taste

  • Sub for peanuts: cashews

  • Sub for cilantro: thai basil

STORAGE

  • Allow everything to come to room temp and then store in airtight containers, like these.

REHEATING

  • Reheat for 1-2 minutes, stirring halfway through.

REDUCE FOOD WASTE

  • Leftover cilantro? Store it in a mason jar in the fridge with a few inches of water in the bottom to keep it fresh for longer!

  • Extra green beans? Chop them up and put them in a ziploc bag in the freezer. Add to a soup recipe in the future. Or you can steam them with some ghee, lemon juice and seasoned salt for an easy side for later in the week.
