Pulled Pork Stuffed Sweet Potatoes

This recipe is super easy- there’s NO chopping and we rely on the crockpot to do the hard work for us. The smoky pulled pork pairs so well with the crunchy, fresh slaw and sweet baked sweet potato. You’ll feel like you’re at an amazing summer cook out for lunch every day.

Notes

SUBSTITUTIONS

  • Make this Whole30 by using compliant mayo and BBQ sauce and eliminating the honey. Here’s some BBQ sauce and mayo I like.

STORAGE

  • Allow everything to come to room temp and then store in airtight containers. I like using these containers to keep my coleslaw separate.

  • If you want, you can dress just half of the coleslaw at first, then dress the rest when you need it. This will keep it fresher.

REHEATING

  • Remove the coleslaw from your meal prep container. Reheat the rest for 1-2 minutes, stirring halfway through.
